Guam residents will have a unique learning experience in food self-sufficiency in September as the University of Guam Land Grant Extension Service hosts a hands-on poultry processing workshop. The event will take place from 8:30 a.m. to noon on Saturday, Sept. 13, at the UOG Yigo Research & Education Center.

Led by UOG animal and meat scientist Dr. Jeng-Hung Liu, the workshop will begin with a lecture portion to teach participants about USDA food safety guidelines and the proper processing techniques. Then participants will get hands-on experience processing a live chicken — including slaughtering, defeathering, gutting, butchering, and packaging.

After the processing portion of the workshop, participants will learn the basics of roasting and smoking their freshly harvested chicken. Their roasted chickens will be ready for pickup later that same day.

The workshop is part of a U.S. Department of Agriculture grant project at UOG with the broader goal of growing the meat and poultry processing workforce in Guam. The grant will fund a series of hands-on red meat and poultry processing workshops over the next several years. Workshop registration
